where can I find an overview of all attributes provided by an essentials component? Maybe I am overlooking something in the documentation. For example the Menu Component.

a list of the standard HST components and their attributes can be found here.
Not sure if all the properties are documented so the best you can do is inspect the class and related parameters info interface.
