Is there an easy way to change the page layout of a home page?
Seems like I may have to create a new channel, use the correct page layout, re-create the home page, and then move all the other pages (under home) over from the old channel. Does that sound right?

Even if you create a channel from the blank template, you will get a generic homepage. It comes as an Experience Page. If you want that experience page to have a different template, delete the one created for you and make a new one with your adjusted template. The homepage is agnostic to any of the pages under it, so you shouldn’t need to move other documents.
